Antiguamente en las casa humildes limitadas por la falta de alimentos se elaboraban los profiteroles, eran peque\u00f1as porciones que se preparaban con el pan, las verduras, la carne y las salsas que no se consum\u00edan despu\u00e9s de una comida. Con el paso de los a\u00f1os\u00a0 la receta fue variando y se le a\u00f1adieron huevos y mantequilla, consiguiendo una masa m\u00e1s ligera que una vez cocida se rellena de nata, trufa o crema. El chef que siempre lograba complacer sus exigencias cay\u00f3 enfermo y la responsabilidad\u00a0 fue para un joven aprendiz de tan solo 16 a\u00f1os, se llamaba Franz Sacher.
